Meet the Chef

Executive Chef Hung Quan began his journey with Noble House Hotels & Resorts in Dallas, Texas at the Adolphus Hotel. He has since worked at three different locations: San Diego, San Francisco and presently BALEENkitchen in Redondo Beach, CA. On any given day, one could find Hung at his local, “Happy Hour,” spot aka, the local Farmer’s Market. The purpose of his cuisine is to highlight the unique flavor of each ingredient by using fresh, local California produce. He ultimately believes that seasonally harvested, quality food brings people together to heal their souls and satiate their appetites.
